Butternut & Chickpea Moroccan Stew

Ingredient list

  • 700g butternut 

  • 2 garlic gloves 

  • 2cm ginger 

  • 2 tsp cumin

  • 1 tsp cinnamon 

  • 1 tsp turmeric 

  • 1 red onion

  • 1 can chickpeas 

  • 1l vegetable stock

  • Olive oil

  • Salt

  • Coriander 

  • Dollob of double yoghurt for serving 

Directions

Roast butternut & ginger & garlic and all the spices till soft and brown. 

In a different pan, fry your onions until soft.

Add all the prepared ingredients with the chickpeas and vegetable stock in a pot and simmer for 15-20 min.

Serve with fresh coriander and yoghurt or sour cream. Add Naan bread delicious!!
