Orange and Lemon Cake

Cake Ingredients

  • 1 Orange

  • 2 Medium Lemons

  • 3 cups sugar

  • 3 cups flour

  • ½ teaspoon baking soda

  • ¾ teaspoon Salt

  • 1 cup unsalted Butter, softened

  • 6 large Eggs, at room temperature

  • 1 cup Sour cream

Lemon Icing Ingredients

  • 125ml Mascarpone

  • 125ml Cream cheese

  • 60ml Honey

  • Juice of ½ a Lemon

Cake Directions

Wash and dry your hands thoroughly, you’ll be using them in the first few steps.

Preheat oven to 160ºC and grease a cake tin.

Rinse your fruit under luke warm water and pat dry.

Put your sugar in a bowl and zest all your fruit directly into the sugar. Use your fingers to rub the zest into the sugar until evenly distributed and fragrant.

Slice your skinless orange and lemons into quarters and use your hands to squeeze out all the juice. Also add the fruit in the bowl, just make sure to leave out any pith.

Sift your dry ingredients together into a bowl.

Using an electric whisk or stand mixer, mix the butter on medium speed for 2min. Add half of the sugar and zest mixture and mix on medium speed for another 2min. Add the remaining sugar and zest mixture and mix for 4min. Make sure to scrape the bottom and sides to thoroughly mix the ingredients. The mixture should be fluffy and fragrant.

Add the eggs one at a time to the butter and sugar mixture, mixing for 30sec between each egg. Remember to scrape the bottom and side between each egg to ensure even mixing.

Using a low speed, add the sour cream and flour mixture and mix until just combined. Fold in the fruit juice and pieces. 

Pour the batter into your prepared cake tin(s) and tap lightly on the counter to remove any large air bubbles.

Bake the cake until golden and a cake tester inserted in the centre comes out clean. About 60 - 75 min depending on your pan. Let the cake cool in the pan for 20min, then carefully unmold onto a cooling rack before icing.

Lemon Icing Directions


Combine the mascarpone, cream cheese, honey and lemon juice together in a bowl and mix well.

Ice your cake once it has cooled completely.
