Ingredient list
10g Dried yeast
2 Tablespoons Honey
500g Rye Flour
400g Whole-wheat flour
A pinch of salt
Directions
Makes 1 loaf
Preheat your oven to 220ºC
Activate your yeast by placing it in a bowl with 50ml warm water while you are busy with the rest of the recipe.
Dissolve your honey in 550ml warm water.
Combine your flours + salt in a mixing bowl. Make a well in the middle of all the flour and pour in the yeast + the honey water. Mix the ingredients to form a sticky dough.
Tip it onto a floured surface and kneed the dough for a few minutes. Place it into a oiled bowl, cover and let it rise in a warm place for about an hour, repeat the kneeing and resting one more time the second time placing it in the tin you will be baking it in which has been greased with any kind of oil or butter, dusted with flour.
Bake for 35-40min until crispy and golden brown on top. Remove from tin and place back into the oven for about 5 more minutes.
