Quick + Easy Biscotti
Ingredient List
150g sugar
2 eggs
Orange zest
Lemon zest
2 teaspoons vanilla
3 drops orange blossom
3 drops rose water
180g flour
pinch of salt
1 teaspoon dry yeast
50g crushed almonds, with or without skins
Directions
1. Preheat the oven to 180ºC.
2. Mix your eggs and sugar thoroughly.
3. In another bowl, combine your orange zest, lemon zest, vanilla, orange blossom and rose water. Add this to your egg and sugar mixture.
4. Mix your dry ingredients together, use a whisk to combine it before adding it to your wet ingredients.
5. Mix well and turn the dough out onto a floured surface
6. Cut the dough into two equal portions and work into 2 x 2cm thick by 8cm wide log.
7. Brush with egg wash and sprinkle some sugar on top. Bake for 20min
8. Take it out of the oven and cut into bite size thickness and put it back in the oven for 4min. Turn it over and bake for another 4min.
9. Serve with some fresh coffee.
