Autumn Lemon Chicken
Ingredients
1 onion
1 garlic
2 tablespoons spoon butter
2 teaspoons Cape Malay spice
4 chicken breast
Flour to dust chicken
350ml chicken stock
Juice of one lemon
Slices of 1 lemon
250ml sourcream
Olive oil
Salt + Pepper to taste
Scoop of Sour Cream and some fresh Chives to serve
DIRECTIONS
Fry your chicken that has been lightly dusted in flour in olive oil. Be careful to not dry our your chicken. When ready remove from heat and set aside.
Fry your onion, garlic and Cape Malay spices together until beautifully soft and fragrant. Add your chicken stock, lemon juice and turn up heat to boiling point. Add sourcream and turn down heat to lightly simmer, add your chicken and lemon slices.
Serve with salad, we used orzo pasta and added an additional dollop of sourcream and some course chopped chives.
